Tasting Notes: A full-flavoured and aromatic naturally-made wine with appealing notes of white flowers, citrus flavours, exotic fruit and crisp green apple. Beautifully balanced, the fruit is layered with funky, mineral undertones through to a precise finish.
Grapes: Chardonnay 80%, Sauvignon Blanc 20%
Best Enjoyed: A lovely white Pork dishes, in particular for sausages in a creamy sauce.
Good to Know: The wine was made with minimal intervention and without the addition of sulphites. The carefully selected grapes were received into the winery via gravity and immediately pressed to extract the juice. Fermentation took place with natural, wild yeasts present on the grape’s skin, at low temperatures of 16 to 18°C. Vinification took place in neutral concrete tanks to allow the purity of fruit and the wine’s natural characteristics to shine through.
